If a meeting delays lunch, first check whether the meal arrived hot or chilled, its use-by information and storage instructions. Contact the kitchen if any of this is missing. Different dishes should not be assumed to have one shared shelf life.

Limit time at room temperature

USDA guidance says to refrigerate perishable food within two hours, or one hour when ambient temperature exceeds about 32°C, and keep the refrigerator at about 4°C or below. This general guidance does not establish a shelf life for an Eat Better dish. Consider time before delivery as well as time after it. [1]

Do not apply one shelf life to everything

Different delivered dishes need their own storage limits. FSA advises cooling rice quickly, ideally within an hour, refrigerating it for no more than 24 hours before reheating, and reheating only once. Takeaway rice may already have been reheated. Ask the kitchen and follow the stricter dish-specific limit. [2]

Reheat evenly

USDA recommends reheating leftovers to about 74°C internally. Check with a food thermometer where possible. Stir or rotate microwave-heated food and use suitable containers. Do not assume every lid, film or sauce cup is microwave-safe. [3]

Prepare the receiving location

Check office refrigeration and reheating facilities before ordering. If you cannot store the meal appropriately or eat promptly, discuss another delivery time. For group orders, make sure each recipient gets the instructions.
