How to keep baked chicken breast juicy and safely cooked
A practical guide to even chicken portions, a safe internal temperature and satisfying sides for a better lunch.

Start with even pieces
A chicken breast can have a thick centre and a thin tail. Try dividing a large piece into portions of similar thickness so you can monitor them more consistently. Arrange them in a single layer. This is a home-cooking guide, not a tested production recipe from the Eat Better kitchen.
Plan the seasoning and keep dressing separate
For a gentle flavour direction, try pepper, garlic and herbs, with lemon or dressing added at the table. Check prepared seasoning blends before adding more salt. Measure what you use so you can adjust the next batch instead of changing several things at once. A short note about the seasoning can be more useful than an elaborate recipe you cannot repeat.
Measure the inside, not just the oven
USDA FSIS recommends an internal temperature of 74°C for poultry. Check the thickest part and each large piece; continue cooking if needed. Oven temperature and a recipe's timer do not establish safe doneness. Once that temperature is reached, avoid continuing to bake simply because the sides are not ready. [1]
Have the rest of lunch ready
Prepare rice and vegetables before the chicken finishes. Transfer cooked meat to a clean plate, never the plate used for raw chicken. Set out containers and utensils before portioning. Separate the meal being eaten now from portions that need storage. This gives you fewer competing tasks while the chicken is cooking.
Make the sides work with the chicken
Try herb chicken with brown rice, carrots and broccoli, or lemongrass flavours with cucumber. Add dressing gradually. These are flavour ideas, not prescribed calorie portions. If you track protein, use actual ingredient weights and appropriate nutrition data, distinguishing raw from cooked weight rather than estimating from a photograph.
